Lamb and Hummus Pita Sandwich

Ingredients
- 2 pounds boneless lamb, cubed (chicken or pork can be substituted)
- 1 cup Newman’s Own Lemon Pepper Marinade
- 1 tablespoon marjoram
- 1 tablespoon oregano
- 1/4 cup minced garlic
- Pinch of cayenne pepper (optional)
- Hummus
- Whole-wheat pita bread
- Cherry tomatoes
Preparation
- 1. Sprinkle the cubed lamb with marjoram and oregano and let stand. Transfer to covered bowl and add Newman’s Own Lemon Pepper Marinade, garlic and cayenne pepper. Marinate in a refrigerator for six hours or, if possible, overnight.
- 2. Prepare your grill and place the lamb cubes onto skewers. When ready, place over hot grill. Occasionally brush the lamb with extra marinade and cook until done, roughly six to ten minutes depending on the size of the cubes.
- 3. Mince cubes and spoon into whole-wheat pita bread. Add hummus and chopped cherry tomatoes.
